Cheap and fast recipies

... for bachelors who want to impress someone by their cooking aptitudes :)

Rice, cantonese style

Buy the following:

- Perfumed rice (any rice will do though, broken perfumed rice is a good choice)
- Eggs
- Bacon
- Nuoc Mam (fish sauce)

Cook the rice (takes 10 to 15 min) in salted water (clean the rice in water untill water is transparent if you cook the rice in just the right amount of water, otherwise pour out the skin on the water after cooking). Fry the bacon in a pan, (make them crispy) cut it in small pieces and save it in a plate (takes 5 min). In the same pan add oil and cook the eggs, sunny side up, but break the yokes to get lightly scrambled eggs (takes a few min.). Pour Nuoc mam on the eggs when frying them. Cut the eggs in small pieces. Mix everything up. An ideal plate to save in the fridge and reheat in the microwave when in a hurry. The Nuoc Mam and the bacon should provide the saltiness necessary. No need to add salt. To improve the plate, we can add lemon to the rice water to give it a light lemon taste. Peas can also add some color. The rice can be also be refried.

Rice, with sunny eggs

Buy the following:

- Perfumed rice (any rice will do though, broken perfumed rice is a good choice)
- Eggs

Cook the rice in salted water. Make a couple of sunny side eggs. Serve the eggs on top of the rice. When eating, break the yokes to mix them with the rice.

Nem sauce

Buy the following:

- Nuoc mam
- Lemon
- Vinegar (ideal is lemon vinegar mix, else use white vinegar)
- Sugar
- Red peper & garlic sauce

Mix 1 dose of sugar with 2 doses of hot water, add 1 dose of vinegar then 1 of nuoc mam. Add lemon juice in case you don't have lemon vinegar. Add a tiny bit of crushed red peper and garlic. Sometimes people add stripes of carrots for the looks. The sauce is ready for the nems.

Serve the fried nems with the sauce and fresh snappy salad and fresh mint leaves.

Chopped beef steak with peper sauce

Buy the following:
- Frozen chopped beef steak
- Black peper (crushed, not in powder)
- Cream

In a pan, cook the frozen steak in oil, maximum heat. When the top softens put generously crushed black peper, as well as regular peper and salt. Press the steak to flatten it a bit when it cooks. When finished cooking, the steak should be very well cooked outside and red inside. Take it out and cut lower the fire to the minimum. Pour the cream in the pan and add salt & pepper. Pour the sauce on the steak, and put the pan to wash immediatly.
Cream can be replaced by a bit of water and potato feculent. Worcester sauce can be poured during cooking.

Spaghetti carbonara

Buy the following:

- Spaghettis
- Eggs
- Bacon

Cook the spaghettis (5 to 10 min in boiling water), fry the bacon. Mix the spaghettis and the bacon with the yoke of an egg (or 2). Emmental cheese can be sprinkled on top.

Spaghetti bolognaise

Buy spaghetto or similar... or use chopped beef steak, tomato sauce and onions, a bit of garlic salt and peper.
Optional: fry some onions and add them to the spaghetto sauce.

Quesadillas

Buy the following:

- Tortillas
- Ham
- US: Cheddar cheese (? the white one not the yellow one)

Make a sandwitch, tortilla-ham-cheese slices-tortilla. Heat in a pan, light fire, untill the tortillas start to get brown spots (black spots= burn, note: 2 tortillas-> flip the sandwich). When the cheese is melted its good to eat.
Optinal: you can add avocado (best), guacamole or red sauce. It's also nice to eat iceberg lettuce with it (it's a cross between cabbage and regular letuce providing fresh crisp leaves)
